Rat Paws This recipe is called Omelette Rat Paws

You will need 2 eggs for every person who wants to eat the omelette.
1 pinch of salt
1 pinch of pepper
A knob of butter
1 teaspoon of cold water
What to do 1. Crack open the eggs and drop them into a bowl, taking care not to get bits of egg shell into the bowl.

2. Beat the eggs, salt, pepper and water together in a bowl.

3. Put a frying pan on the stove over a high heat, add the butter and wait until it is melted and sizzling. Swirl the butter around the pan to make sure the entire pan is well covered.

4. Pour the egg mix into the middle of the pan and leave it to cook for about 2 minutes, or until the egg round the edges of the pan is set firmly.

5. As the egg sets, use a spatula to push runny egg towards the edges of the pan to help it cook.

6. Keep pushing runny egg to the edges until it is all cooked.

7. If the eggs seems to be sticking to the pan, slide the spatula under the omelette to loosen it and stop it from burning.

8. When the entire omelette is cooked, loosen it from the pan if you need to, then slide it out of the pan and onto a plate by tilting the pan and letting the omelette slide out on its own.

TIP: You can add grated cheese after it is cooked, and serve it with a salad, or add cooked tomatoes, onions and mushrooms to the egg mix at the start of the cooking.
